Why your diabetic-friendly brownies came out gummy (and how to fix them)

Most sugar-free baking advice tells you WHAT to substitute for sugar. It rarely tells you why your specific batch turned out gummy, dense, or wet in the middle anyway. Here's the actual failure mode first, then the fix — not another list of sweetener brands.

Why did my sugar-free brownies turn out gummy or dense?

Most often it's not the sweetener brand — it's how the swap was measured. Sugar isn't just there for sweetness: it holds moisture, tenderizes the gluten network in the flour, and helps a batter set correctly as it bakes. When a recipe swaps sweetener for sweetness (matching how sweet it tastes) instead of bulk (matching the volume or weight sugar would have contributed), the batter's structure changes along with the sweetness — and a denser, gummier, or wetter-in-the-middle result is the common outcome. This is a mechanistic, structural argument; the exact magnitude depends on the specific recipe and wasn't independently measured for this guide.

Is it the erythritol specifically?

Erythritol's own documented behavior points toward dry and dense, not gummy. It swaps close to 1:1 by volume for sugar, but it's only about 60–80% as sweet as sugar by weight, and Database v0.1's cake-context swap guidance calls for adding 1–2 extra tablespoons of liquid per cup swapped specifically to counter a drier bake. It also recrystallizes and can turn grainy on cooling — a texture complaint, but a different one than "gummy." If your brownies are gummy rather than dry, the more likely culprits are underbaking (see below) or a bulk mismatch elsewhere in the recipe, not erythritol's own chemistry.

Could it be the allulose instead?

If your recipe used allulose, a different failure mode is more likely: it participates directly in Maillard browning and browns faster and darker than table sugar at the same oven temperature. Database v0.1's swap guidance recommends dropping the oven temperature roughly 25–35°F when substituting it — without that adjustment, the top and edges can look and read as "done" (dark, set) well before the center has actually finished baking, which reads as a gummy or underbaked middle even though nothing about allulose itself is "gummy." Allulose is also about 70% as sweet as sugar by weight, so the standard swap uses roughly 1⅓ cups allulose per cup of sugar — a larger bulk swap than erythritol's near-1:1, worth double-checking against whatever ratio your recipe actually used.

The core issue: swap by bulk, not by sweetness

Sugar contributes structure and moisture-holding capacity to a batter in rough proportion to how much of it is physically there — not how sweet it tastes. Erythritol and allulose are both less sweet than sugar by weight (erythritol roughly 60–80% as sweet, allulose roughly 70% as sweet), so a swap sized only to "taste as sweet as the sugar it replaces" quietly under-delivers the bulk sugar would have provided. That's the structural argument behind most sugar-free baking texture failures — brownies are especially exposed to it because their sugar-to-flour ratio runs much higher than a typical cake or cookie, so a bulk shortfall shows up more in the finished texture. The exact size of that effect varies by recipe and by how much of the sugar was replaced; this guide states the direction and mechanism, not a precise universal number.

Some sugar-free brownie recipes lean on molasses, date syrup, or corn syrup for the chew a plain sweetener swap struggles to replicate.   1. 1. Check what you actually swapped by — sweetness or bulk.

    If the recipe (or your own substitution) matched sugar's sweetness rather than its volume/weight, that's the most likely single cause of a dense or gummy result. Re-measure by volume against the original sugar amount, not by "tastes about as sweet."

  2. 2. If you used erythritol, add back liquid.

    Database v0.1's cake-context guidance calls for 1–2 extra tablespoons of liquid (milk or water) per cup of erythritol swapped in, to counter its drier bake. Cool the brownies completely before judging texture — erythritol bakes firm up noticeably as they cool.

  3. 3. If you used allulose, drop the oven temperature.

    Reduce the oven temperature roughly 25–35°F versus the sugar version, and check the center with a toothpick rather than trusting how dark the top looks — allulose's faster browning can make the top look done well before the center has set.

  4. 4. Don't add unverified "chew" ingredients as if they were sourced fixes.

    Molasses, date syrup, and corn syrup are common informal fixes for brownie chew, but RecipeMend's database doesn't yet have a verified carb figure for any of the three — they're flagged unresolved rather than asserted.
