Why allulose can skip "sugar" on the label but not "carbohydrate"
A dessert sweetened with allulose can legally show 0g on "Total Sugars" and "Added Sugars" — yet the same product still counts every gram of allulose toward "Total Carbohydrate." That's not a labeling error. Here's the exact FDA rule.

What exactly did the FDA decide?
In its October 2020 final guidance ("Guidance for Industry: The Declaration of Allulose and Calories From Allulose on Nutrition and Supplement Facts Labels"), the FDA exercised enforcement discretion to exclude allulose from the "Total Sugars" and "Added Sugars" declarations on the Nutrition Facts label. It also permits a reduced calorie factor of 0.4 kcal/g for allulose, versus the standard 4 kcal/g used for sucrose and most sugars.

No. It still counts toward "Total Carbohydrate" — the FDA's decision applies specifically and only to the Total Sugars / Added Sugars lines, not to Total Carbohydrate. A product can legitimately show a low "Total Sugars" figure while still carrying a meaningful Total Carbohydrate count from allulose.

No — this is a labeling-enforcement decision, not a metabolic claim. Allulose has a low but non-zero measured glycemic and insulinemic response in the rare-sugar research literature reviewed here, meaningfully different from erythritol's near-total non-absorption (about 90% excreted unchanged). RecipeMend still buckets allulose as low-impact for blood glucose, but flags this distinction explicitly rather than treating all non-nutritive sweeteners as identical.

Closer than most alternatives — allulose participates directly in Maillard browning as a reducing sugar, and can actually brown faster and darker than table sugar at the same oven temperature. Common guidance is to drop the oven temperature about 25–35°F and watch closely near the end of the bake to avoid over-browning. The swap ratio is about 1⅓ cups allulose per 1 cup sugar, since allulose is roughly 70% as sweet by weight.
