Why stevia baking tastes bitter — and the ratio that fixes it
A licorice-y, metallic aftertaste in stevia cookies or cake almost always means too much stevia, not the wrong stevia. The catch: "how much" depends entirely on which of three very different products your recipe means by "stevia." Here's the dose problem first, then the fix.

Why does my stevia baking taste bitter or metallic?
Almost always because too much of it was used relative to what the product actually needs. Pure Reb-A extract is roughly 200–250x sweeter than sugar by weight, so the practical ratio is about 1 teaspoon of pure extract per 1 cup of sugar it replaces — a tiny amount. If a recipe (or a home conversion) instead measures "stevia" the way it would measure a 1:1 blend or plain sugar, the pure-extract fraction gets overdosed by an order of magnitude, and stevia's own well-documented bitter/licorice-like aftertaste — already more pronounced at higher concentrations — becomes the dominant flavor. The fix starts with confirming which product is actually in the pantry, not swapping brands.

Mostly dose. Steviol glycosides do carry a real, frequently cited bitter/licorice-like note — that part isn't imagined — but Database v0.1 flags it as "more pronounced at higher concentrations," which is exactly the failure mode an overdose creates. A stevia/erythritol blend, diluted specifically so it measures 1:1 with sugar, carries a milder version of the same note because there's simply less stevia per spoonful. The short version worth repeating here: pure extract is teaspoon-scale, a blend is cup-scale, and mixing up which one a recipe means is the single most common cause of both a bitter overdose and a flat, under-sweetened result.
If I use less stevia to fix the bitterness, what happens to the recipe's structure?
It creates a second problem: pure stevia extract and liquid drops contribute essentially zero bulk, moisture, or structure to a batter, precisely because so little is used. Cutting the dose to fix bitterness doesn't restore any of the volume sugar would have provided — that was already missing the moment pure extract or drops replaced sugar, regardless of how correctly it's dosed for sweetness. Sugar is doing two separate jobs in a batter (sweetening and providing bulk/moisture/structure), and pure-extract stevia only ever replaces the first one.

Yes — that's the point of the blend. Because it's diluted with erythritol (or another bulking agent) specifically so it measures 1:1 with sugar by volume, the blend behaves in the oven more like granular erythritol than like pure stevia: it bakes with volume, carries erythritol's known cooling effect and some recrystallization on cooling, but doesn't leave the same structural gap. If a recipe needs both sweetness and bulk from one ingredient, the blend — not pure extract or drops — is the product built for that.

1. Identify which stevia product the recipe actually means.

2. If the batter tastes bitter or metallic, assume overdose first.
Before switching brands, re-check the amount used against the correct ratio for that specific product. A pure-extract measurement even slightly larger than intended reads as licorice/bitter fast, since the effective concentration is so high per teaspoon.

3. If using pure extract or drops, add a separate bulking agent.
Erythritol, allulose, extra flour, or fruit puree can replace the volume/moisture pure-extract stevia doesn't provide. Fixing the dose for sweetness and fixing the bulk are two different steps — do both, not just one.

4. Pick desserts with a flavor that competes with stevia's aftertaste.
Dark chocolate, coffee, cinnamon, or citrus zest mask a mild aftertaste better than a plain vanilla cake or shortbread, where nothing else is competing for the palate. This is common baking practice, not a sourced ranking — treat it as a starting point, not a rule.
